Craveable Breakfast Cookies

These one bowl breakfast cookies are simple to make and even easier to enjoy. Swap out your favourite seeds as desired.

Ingredients

  • Overripe Bananas* – 530g (6 bananas)
  • Peanut Butter – 320g (1 ¼ cup)
  • Applesauce – 83 g (⅓ cup)
  • Vanilla – 1 tsp
  • Salt – ½ tsp
  • Old fashioned rolled oats – 320g (4 cups)
  • Hemp hearts – 165g (1 cup)
  • Pumpkin seeds – 60g (½ cup)
  • Dark chocolate chips / chopped chocolate – 240g (1.5 cup)

Steps

  1. Preheat oven to 350 oF. Line two baking sheets with parchment paper. 
  2. In a large mixing bowl or bowl of a stand mixer, mash bananas.
  3. Add peanut butter, applesauce, vanilla, and salt. Mix well to combine. 
  4. Add oats, hemp hearts, pumpkin seeds, and chocolate. Mix to combine 
  5. Place ¼ cup at a time onto the baking sheet. This works great with a ¼ cup measure or two servings of a large cookie scoop. Use the back of your measuring cup and your hands to shape into flat circles, approx 1 cm thick. 
  6. Bake for 15-18 minutes until cookies are set and slightly browned. Let cool on the baking sheet for at least 10 minutes before moving to a rack to continue cooling. 

Notes

Best with bananas with brown spots. If using frozen bananas, thaw completely, remove from peel, and drain excess liquid into a strainer
