Chocolate Peanut Butter Balls

If you’re looking for a treat guaranteed to win hearts and taste buds this year, look no further. 

The addition of coconut allows these to come together with less sugar than classic recipes while still being totally decadent. You might even consider them a protein boost this time of year!

Ingredients

  • Peanut Butter, Natural (oils stirred in well) – 250g (1 cup)
  • Icing Sugar – 50g (⅓ cup)
  • Shredded Coconut, Unsweetened – 50g (~½ cup, heaping)
  • Walnuts, finely chopped – 75g (~⅔ cup, scant)
  • Dates, finely chopped – 95g (½ cup)
  • Dark chocolate, 70% or higher, for melting

Steps

  1. Place peanut butter and icing sugar in the bowl of a stand mixer or large mixing bowl (stand mixer highly recommended). Combine completely, scraping down the sides and bottom as needed. 
  2. Add coconut, walnuts, and dates and mix well to evenly distribute. 
  3. Optional: Place bowl in fridge for ~30 minutes. This will help the mixture to firm up and will be less sticky to handle 
  4. Line two baking sheets with parchment paper. 
  5. Begin to form peanut butter mixture into balls by using a small kitchen spoon to scoop up, then roll between your palms to form into balls. (Suggested size, about 1 inch diameter.) Place on your parchment-lined baking sheet. Complete until all of your mixture has been made into balls. 
  6. Place in the fridge or freezer for at least 30 minutes to firm up and prevent them from melting during the next step. You can leave these to chill longer as needed. 
  7. Gently melt chocolate by placing it in a double boiler or in a large microwave safe dish. If starting with a block of chocolate, first chop into small pieces. Stir frequently to avoid burning, including when using the microwave. 
  8. Once chocolate is fully melted, take your peanut butter balls out of the fridge / freezer. Using two small spoons, drop one ball at a time into the chocolate and pass back and forth between the two spoons until the ball is fully coated in chocolate. Place on a parchment lined baking sheet and repeat until all balls are coated. (You may need to melt additional chocolate if you run out before you are done.)
  9. Place tray in the fridge at least 2 hrs or overnight, until fully set. Transfer chocolate peanut butter balls to a firm, sealed container and store in the fridge. Enjoy!
